French cuisine is much more than the haute cuisine inherited from the nobility. It is also the tasty, inexpensive cuisine that French families eat every day, called cuisine bourgeoise, or “bourgeois cuisine.

DeleteTony, I just found this very interesting article, even for a French native, in Le Monde about a resurgence of cuisine bourgeoise in France, which is nothing to sneeze at! You might stumble on a few recherché words, but it is worth it to keep reading. You'll be starving in no time flat!
ReplyDeleteTwo years ago, my cousin invited her family for a birthday lunch, her 50th, at Pierre Cagnaire's restaurant in Paris. It is a nouvelle cuisine high-end restaurant where you need a magnifying glass to see what in your plate. Each of us was given a printed list of the numerous courses we were going to have. That didn't help much, because all courses looked alike and if you missed one line of the list, you thought you were having something else. Great!
M. Gagnaire is a lovely and kind man, and I wonder what kind of cuisine he cooks for himself, probably cuisine bourgeoise!
